Ingredients for 6 servings:

  • 500 g mascarpone
  • 4 tbsp sugar
  • 4 eggs, including the yolk
  • 4 eggs, including the egg whites, beaten
  • Amaretto
  • Coffee (cold espresso)
  • 1 pack of ladyfingers

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Beat the egg yolks with sugar until creamy and stir in the mascarpone. Fold in the beaten egg whites and season generously with amaretto. Place the sponge fingers in a square baking dish and coat thoroughly with a mixture of espresso and amaretto. Then add a layer of marcarpone cream, then more sponge fingers, and so on, finishing with a layer of mascarpone cream. Refrigerate. Sprinkle with cocoa powder just before serving.
