Ingredients for 5 servings:
- 3 egg yolks, very fresh
- 80 g sugar
- 500 g mascarpone
- 300 ml espresso, cooled
- 2 tbsp Amaretto
- 36 ladyfingers
- Cocoa powder for sprinkling

For the tiramisu, boil espresso and let it cool. Beat the egg yolks and sugar until frothy. Fold the mascarpone into the egg and sugar mixture. Add 2 tablespoons of espresso and whisk briefly until creamy; it should be spreadable; if not, add another tablespoon of espresso. Mix the remaining espresso with 2-3 tablespoons of Amaretto and dip the sponge fingers into the mixture. Stack the first sponge fingers in 5 glasses, alternating layers: first the sponge fingers, then the mascarpone cream. Refrigerate overnight. Sprinkle with cocoa powder before serving.
