Tiramisu (Peter Hubert)
The perfect tiramisu (peter hubert) recipe with a picture and simple step-by-step instructions.
- 400 g Mascarpone
- 4 tbsp Sugar
- 4 Pc. Egg yolk
- 4 Pc. Protein
- 150 ml Strong espresso cold
- 50 g Cocoa powder
- 32 Pc. Ladyfingers
- 1 shot Rum
- Mix the mascarpone, egg yolk and sugar in a bowl, fold in the whipped egg whites. Put espresso or coffee in a tall plate with a dash of rum or brandy. Dip biscuits one by one and place the first layer in the most angular shape possible, then a layer of mascarpone mixture, another layer of dipped biscuits and then the mascarpone mixture, etc.
- The top layer must be the mascarpone mixture. Put the whole thing in the cold for several hours if possible. Before serving, lightly powder with unsweetened cocoa powder through a fine sieve.
