Ingredients for 4 servings:

  • 8 slices of toast
  • 50 g herb butter, soft
  • 150 g cheese (Gouda), medium-aged, grated
  • 4 eggs
  • 250 ml chicken broth
  • 125 ml whipped cream
  • Salt
  • pepper

Preheat oven to 175°C. Spread the toast with herb butter, spread 100g of cheese on 4 slices of toast, and top with a buttered slice of toast. Cut the sandwiches diagonally. Butter a square baking dish and place the sandwiches in the dish, tiled like roof tiles. Make a marinade from eggs, chicken broth, cream, salt, and pepper and pour evenly over the sandwiches. Let it rest for about 10 minutes. Sprinkle the remaining cheese over the casserole. Place the casserole in the oven and reduce the heat to 150°C. Bake for about 25 minutes, until the egg mixture sets and is lightly browned. Sprinkle coarsely ground pepper over the casserole and serve with a fresh seasonal salad.
