Toast wedges filled with mozzarella and tomatoes

Ingredients for 4 servings:

  • 2 m.-large tomato(s)
  • 1 package of mozzarella
  • 2 large eggs
  • 250 ml milk
  • 8 slices of toast
  • 2 tbsp mixed herbs, chopped
  • 80 g breadcrumbs
  • 4 tbsp oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 minute; Cooking/baking time approx. 10 minutes; Total time approx. 26 minutes

Wash the tomatoes, remove the stems, and thinly slice the flesh. Drain the mozzarella and slice it thinly. Whisk the eggs with the milk, salt, and pepper. Place the slices of toast one at a time in the egg mixture, turn them over, remove them, and squeeze them lightly. Top 4 soaked slices of toast with tomato and mozzarella slices. Sprinkle with herbs. Cover with the remaining slices of toast. Coat the sandwiches several times in the breadcrumbs. Heat the oil in a pan, cook the sandwiches one at a time on both sides, and then keep them warm in the oven at 50°C.
