Chocolate-cherry muffins with rum flavor

Ingredients for 1 servings:

  • 70 g butter or margarine
  • 250 g flour
  • 2 tsp baking powder
  • 180 g sugar
  • 1 packet of vanilla sugar
  • 120 ml milk
  • 2 eggs
  • 1 tbsp, levelled cocoa powder
  • 1 jar sour cherries, drained
  • 1 tsp rum flavoring
  • Grease for the mold or paper baking cups

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Definitely try them, they’re great! Makes 20.

Melt the butter. In a bowl, mix the flour, baking powder, sugar, and vanilla sugar. In another bowl, combine the milk, eggs, and butter. Combine the wet mixture and the flour mixture with a hand mixer. Now add the cocoa powder and rum flavoring and mix well. Fold in the cherries with a spoon. Grease a muffin tin or line with baking cups. Using a tablespoon, fill the cups 3/4 full with the batter. Place the tray on the middle rack in an oven preheated to 180°C (top/bottom heat, fan: 160°C) and bake for about 15-20 minutes. The muffins are done when they crack open at the top. Remove the tray from the oven and let cool for about 5 minutes, then carefully remove the muffins from the tin.
