Toast with asparagus cream

Ingredients for 4 servings:

  • 250 g asparagus, white
  • ½ tsp salt
  • 1 tbsp sugar
  • 125 g cream cheese
  • salt and pepper
  • Baguette(s)
  • basil
  • tomato(s)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

A crunchy and creamy snack to indulge in

Wash and peel the asparagus, and trim off the woody ends. Cook in plenty of water with salt and sugar for about 13 minutes, drain, and let cool. Chill for 1 hour. Finely chop the asparagus and puree it with cream cheese in a blender. Season with salt and pepper. Toast the baguette slices for 2 minutes. Spread with the cream and top with basil and tomato slices.
