Tofu – millet patties, vegan

Ingredients for 8 servings:

  • 100 g millet (0.5 cup)
  • Water, boiling
  • 1 ½ cup(s) water
  • 200 g tofu, plain
  • 3 tbsp mustard, heaped (Mostrich)
  • 2 tbsp buckwheat, ground
  • 1 tbsp coconut, grated
  • salt and pepper
  • Oil, for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Rinse the millet with hot water to remove any bitterness. Add it to 1.5 cups of boiling water, bring to a boil, reduce the heat to very low, cover, and after about 8 minutes, turn off the heat. Let it swell for about 10 minutes. Mash the tofu with a fork and mix with the mustard. Add all the other ingredients and mix. Form about 8 patties, place in hot oil, flatten slightly with a spatula, and fry on both sides over medium heat. This goes well with many dishes; we served it with brown rice and Bavarian cabbage, or with patties, etc.
