Tofu Patties III

Ingredients for 7 servings:

  • 200 g tofu, plain
  • 1 tbsp cocoa butter or lactose-free margarine
  • 50 g onion(s), finely diced
  • 100 g pepper(s), frozen cut into strips
  • 30 g ginger, finely chopped
  • 10 peppercorns, ground
  • 4 tbsp soy sauce (tamari)
  • 1 tsp herbal salt, possibly more
  • 1 pinch(s) of sugar
  • 200 g buckwheat, ground
  • 100 ml white wine, dry or more
  • Cocoa butter or margarine for frying
  • Soy sauce, (Tamari) 7 x 0.5 tsp

Working time approx. 30 minutes; Total time approx. 30 minutes

Mash the tofu finely with a fork, melt the cocoa butter or margarine, and fry the tofu, stirring occasionally, until it turns a yellowish brown. Add the onion and bell pepper strips, along with the ground pepper, and fry briefly. Mix the tamari, ground buckwheat, chopped ginger, sunflower seeds, a pinch of sugar, and herb salt. Add enough white wine to form a pliable dough. Season to taste, adding more (herb) salt if desired. Form palm-sized patties. Place in hot cocoa butter or margarine, flatten, and fry. Turn over and drizzle with 0.5 tsp of tamari on each cooked side. My own recipe.
