Tofu with Gomasio spelled crust

Ingredients for 2 servings:

  • 400g tofu
  • 150 ml vegetable stock
  • 100 g spice mix (Gomasio, a sesame and sea salt mixture)
  • 100 g spelt, crushed
  • Butter, in flakes

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 35 minutes

Cut the tofu into approximately 1 cm thick slices, pat dry, and marinate in the vegetable broth for one hour. Combine the gomasio and spelt flour on a plate. Remove the tofu slices from the marinade and immediately coat them with the gomasio and spelt flour mixture, pressing the coating firmly into the surface. Line a baking tray with parchment paper and place the tofu slices on top. Bake in a preheated oven at 180°C for 20 minutes. Remove the tray from the oven, scatter the butter flakes over the tofu slices, and bake for another 10 minutes.
