Ingredients for 3 servings:
- 1 eggplant(s)
- 5 tbsp breadcrumbs
- 5 tbsp olive oil
- 1 clove(s) garlic, finely chopped or grated
- 1 pinch of Provençal herbs
- Oil, for the casserole dish
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Melanzane with a twist
Cut the washed eggplant into approximately 3 cm thick slices and make a small indentation on one of the cut sides. Lightly salt and let it rest for a moment. In the meantime, combine all the ingredients, except the eggplant, and fill the indentations. Grease a baking dish with plenty of oil and place the bites into the indentations. Bake in a preheated oven at 200°C for 25 minutes.
