Ingredients for 4 servings:

  • 3 tbsp olive oil
  • 2 onions, finely chopped
  • 2 red bell peppers, cleaned and sliced
  • 1 chili pepper(s), fresh red, pitted and chopped
  • 1 kg tomatoes, chopped
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Heat the oil. Add the onions and garlic and cook gently until softened. Add the bell peppers and chilies and cook for a few minutes, then add the tomatoes and simmer, stirring occasionally, until reduced to a sauce. Purée the mixture in a blender, then sieve to remove any skins and seeds. Season with salt and pepper, and heat through if desired.
