Tomato and cucumber salad with peppermint

Ingredients for 1 servings:

  • 2 tomatoes, sliced
  • ½ cucumber(s)
  • 1 small onion(s), finely sliced
  • chives
  • 6 peppermint leaves
  • salt and pepper
  • 1 tbsp balsamic vinegar, white
  • some oil
  • Parsley
  • Sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash and slice the tomatoes. Peel the cucumber and cut into slices or small cubes. Finely slice the onion. Place everything in a bowl. Sprinkle with salt and mix well. Finely chop some chives and parsley. Finely slice the peppermint and add it to the bowl along with the other herbs. In a separate bowl, mix the vinegar with salt, pepper, and a pinch of sugar. Add about 1 tablespoon of water, followed by the oil. Pour the dressing over the salad and mix well.
