Zucchini vegetables with pine nuts

Ingredients for 1 servings:

  • 2 small zucchini, sliced ​​or finely sliced
  • 1 small onion(s), cut into small pieces
  • 1 handful of raisins
  • 30 g pine nuts
  • salt and pepper
  • 2 tbsp oil for frying
  • 100 ml water

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Briefly toast the pine nuts in a dry pan. Then remove them. Sauté the onion and zucchini slices in a little oil, then deglaze with a little water and cook until cooked through. Mix with the raisins and season with salt and pepper. Let stand briefly. Sprinkle with the toasted pine nuts before serving. This dish goes well with rice and lamb, for example.
