Tomato and melon salad

Ingredients for 4 servings:

  • 700 g tomatoes, mixed if possible
  • 1 cucumber(s)
  • 1 Galia melon or cantaloupe melon
  • 1 bunch of spring onions
  • 1 handful of sunflower seeds
  • 1 lime(s), juice and zest
  • 5 tbsp olive oil, approx.
  • 1 tsp honey
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the tomatoes into small pieces. Halve the cucumber lengthwise and scoop out the seeds with a teaspoon. Cut the cucumber and melon into pieces, and slice the spring onions into rings. Mix everything in a bowl. Roast the sunflower seeds in a dry pan. Grate the lime zest and squeeze out about 2 tablespoons of the juice. Mix the lime juice, lime zest, olive oil, and honey into a dressing and season with salt and pepper. Mix the dressing and sunflower seeds into the salad.
