Tomato and pepper soup with tea sausage and onion balls

Ingredients for 6 servings:

  • 200 g sausage (fine ham sausage, reduced fat)
  • 150 g onion(s), peeled and weighed
  • 75 g breadcrumbs
  • 2 eggs
  • 1 tsp, leveled salt
  • Pepper, black from the mill
  • 2 tbsp olive oil
  • 2 tbsp sugar
  • 150 g tomato paste, 3-fold concentrated
  • 150 ml red wine, dry or
  • 1 part red wine vinegar with 2 parts water, for children
  • 1 ¼ liters of water
  • 1 tbsp, dried dried oregano
  • 1 tbsp paprika powder, sweet
  • 1 tsp, heaped salt
  • pepper
  • 250 g bell pepper(s), colored, cleaned, weighed

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Quick, sophisticated, inexpensive – starter, snack, light main course or for parties – even children love this soup!

To make the meatballs, knead the sausage meat, onions (very finely diced or chopped), breadcrumbs, and eggs into a dough and season generously with salt and pepper. Let the dough rest in the refrigerator for 10 minutes. Meanwhile, trim the bell peppers and cut them into fine strips or cubes. Then form the meatballs into balls about 2.5 cm in diameter. Moisten your hands with a few drops of water before forming each ball to prevent the dough from sticking and to ensure a smooth surface. This mixture yields about 24 balls. For the tomato and bell pepper soup, heat the oil in a large saucepan and stir in the sugar until lightly caramelized. Deglaze with red wine and add the tomato paste, stirring until smooth. Then add water, add paprika, oregano, and salt, and bring to a boil. Add the sausage and onion balls and reduce the heat (the soup should simmer gently, but not boil). Cover and let simmer for 10 minutes, until the balls float to the top. Finally, add the pepper strips or diced peppers and simmer for another 5 minutes over moderate heat. The ingredients have a total of approximately 1780 kcal. For 6 servings (appetizer), that’s 297 kcal per person. For a main course with 4 servings, the corresponding total would be approximately 445 kcal, making it perfectly suitable for a diet.
