Ingredients for 4 servings:
- 1 celeriac
- 1 tbsp, leveled salt
- 5 tbsp oil of your choice
- 5 tbsp vinegar, as needed
- 5 ½ liters of water
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes
Cut a large to medium celery root in half, then quarter and then eighth. Peel the raw pieces and slice them thinly. Place the cold celery slices in the salted water and bring to a boil (the sliced celery must be covered). After a brief boil (8-12 minutes), add oil, vinegar, and pepper to taste. Remove the pot from the heat and chill. Season with oil, vinegar, and pepper as desired. Once cooled, this makes a wonderful salad dressing that’s also delicious served cold!
