Tomato and zucchini gratin with turkey and basil schnitzel

Ingredients for 2 servings:

  • 1 onion(s)
  • 1 zucchini
  • 2 tomatoes, according to taste
  • 200 g crème fraîche
  • 2 tsp tomato paste
  • 3 tbsp milk
  • Cheese to taste, for topping
  • 4 turkey schnitzels
  • salt and pepper
  • basil
  • herbs, Italian
  • 3 tbsp olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Low carb suitable

Chop the onions and sauté them in heated olive oil until translucent. Then slice the zucchini and add them to the onions. Sauté until lightly browned. Meanwhile, prepare the sauce: Mix the crème fraîche with the tomato paste and season with the spices. Then thin with the milk. Slice the tomatoes and place them in an ovenproof dish with the zucchini. Pour the sauce over them. Sprinkle with the cheese. Bake at 100°C (fan oven) for 20 minutes. Meanwhile, season the turkey schnitzel with salt and pepper. Roll it in dried basil and fry.
