Avocado cream / guacamole

Ingredients for 2 servings:

  • 2 avocados (organic), ripe
  • 2 garlic cloves
  • 1 tbsp, whipped crème fraîche or sour cream
  • ½ tsp mustard, medium hot
  • 1 pinch(s) cayenne pepper
  • 2 dashes lemon or lime juice
  • 2 pinches of salt

Dip with few ingredients and lots of flavor

Halve the avocados, remove the pit, scoop out the flesh with a teaspoon, and mash it as finely as possible with a fork. Press or very finely dice the garlic cloves and add them. Add the mustard, crème fraîche, and lime juice and mix well. Season with salt and a little cayenne pepper. Tips: This guacamole is extremely popular with my children, too, because of its mild, unobtrusive, yet aromatic flavor. That’s why I prefer small, dark organic avocados because they’re usually available ripe and taste less watery. The flavor is simply more intense. The crème fraîche gives the dip an appetizing light green color, a pleasant freshness, and, like lemon or lime juice, protects it from browning prematurely if left standing for a long time. Browning can also be prevented by placing plastic wrap directly on the cream. The amount of salt and cayenne pepper, as well as the number of garlic cloves, is always a matter of taste. This recipe is perfect as a dip with bread, with meat, vegetables, or as a small appetizer!
