Tomato, basil, mozzarella tart

Ingredients for 2 servings:

  • 150g mozzarella
  • 4 large tomatoes
  • 10 basil leaves
  • 2 tbsp olive oil
  • 2 cloves garlic
  • salt and pepper
  • 115 g flour
  • 50 g butter
  • 1 egg yolk
  • 1 pinch of salt
  • some water, cold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine flour, salt, butter, and egg yolk and stir into a smooth dough with a little cold water. Wrap the dough in cling film and refrigerate for 1 hour. After 1 hour, remove the dough, preheat the oven to 190°C, and let it come to room temperature for 10 minutes. Roll out the dough into a 20cm diameter circle and place it in a suitable dish. Prick the dough with a fork, then bake for 10 minutes, until the base is firm but not browned. Meanwhile, slice the mozzarella and tomatoes. Remove the dough from the oven and reduce the heat to 180°C. First, place the mozzarella slices on the dough, then the tomato slices. Dip the basil leaves in the oil and place them on top of the tomatoes. Drizzle the remaining oil over everything. Sprinkle the finely chopped garlic over the dough, season with salt and pepper, and return to the oven for 40-45 minutes.
