  • 1 pinch(s) of herbs, Italian
  • 1 leaf basil, fresh
  • 1 olive, green or black, pitted

Cut the persimmon tomato lengthwise and sprinkle the cut surfaces with salt and pepper. Sprinkle 1/2 slice of goat cheese (thickness to taste) with the Italian herbs and place it on the bottom half of the tomato. Add the basil leaf and the top half of the tomato. Secure the olive with a toothpick or cocktail pick. It’s quick, tastes great, and makes a great finger food for parties. The ingredients are for 1 tomato bite.
