Tomato Bruschetta

Ingredients for 2 servings:

  • 1 Ciabatta, sliced, toasted
  • 3 large tomatoes (vine tomatoes)
  • 2 cloves garlic
  • pepper
  • Herb salt (tomato-mozzarella salt)
  • 4 tbsp olive oil
  • 1 tbsp balsamic vinegar

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

From my grandma

Peel and deseed the tomatoes, and cut into small pieces. Peel and finely chop the garlic, and mix it with the tomatoes in a bowl. Add olive oil and balsamic vinegar. Season with pepper and herb salt. Let stand for at least 1 hour. Layer the toasted ciabatta slices neatly with the tomato mixture and serve immediately.
