Tomato carpaccio with mozzarella

Ingredients for 2 servings:

  • 1 cucumber(s) or mini cucumber
  • 1 small onion(s), red
  • 1 small red chili pepper(s)
  • ½ bunch mint
  • 5 tomatoes
  • 1 ball of mozzarella
  • 3 tbsp lemon juice
  • 6 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

For the dressing, peel and deseed the cucumber, and cut into tiny cubes. Dice the onion, deseed the chili, and also cut into small cubes. Finely slice the mint. Combine all ingredients with oil and lemon juice and season with salt and pepper. Thinly slice the tomatoes and mozzarella and arrange on two plates. Drizzle with the dressing and serve.
