Onion sauce "Soubise"

Ingredients for 4 servings:

  • 500 g onion(s), finely chopped
  • 65 g butter
  • 1 cup meat broth
  • possibly water, hot
  • 1 tbsp wheat flour
  • 1 cup whipped cream
  • some salt and pepper
  • some sugar
  • some vinegar (wine vinegar)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Sauce for meat or fish

Sauté the onions in butter until translucent. Add the meat broth and cook the onions over low heat until soft. Add a little more hot water if necessary. Stir the flour and cream together until smooth, then thicken the onion broth with the flour and simmer briefly. Season to taste with salt, pepper, sugar, and white wine vinegar. If you like, you can strain the onion sauce through a sieve and whip the cream until stiff before adding it.
