Ingredients for 2 servings:

  • 8 slices of toast
  • 3 eggs
  • 125 ml cream
  • 1 tsp vegetable broth, granulated
  • 1 garlic clove(s)
  • 1 onion(s)
  • 250 g leek
  • 1 tsp oregano
  • salt and pepper
  • 600 g tomatoes
  • 250 g mozzarella, sliced
  • 2 tbsp olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Toast the slices of bread and place four slices in a baking dish. Whisk the cream with the eggs and stock. Peel the garlic and onion. Trim the leek and slice it into rings. Sauté them together, then season with salt, pepper, and oregano. Wash and slice the tomatoes. Spread half of the tomato slices and the leek mixture on the slices of bread and arrange the four remaining slices on top. Pour the cream mixture over the slices. Place the remaining tomato slices on top and top with the mozzarella slices. Drizzle everything with the 2 tablespoons of olive oil. Bake in a preheated oven at 200°C for approx. 35 minutes.
