Tomato couscous with broccoli

Ingredients for 2 servings:

  • 1 cup couscous
  • 1 can of tomatoes, chopped
  • 1 head of broccoli
  • 1 onion(s)
  • some olive oil
  • salt and pepper
  • n. B. herbs (e.g. rosemary, thyme)
  • 150 ml water, approx.

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Pour the pizza tomatoes through a sieve and collect the juice. Dilute the tomato juice with about 150 ml of water and bring to a boil. Simmer the couscous in it for about 5 minutes, then let it stand for another 5 minutes. Sauté the onions in olive oil, then add the broccoli. After about 5 minutes, add the drained tomatoes to the pan and cook the broccoli until cooked through. Add a little more water if necessary. When the broccoli is tender, add the couscous and season with salt, pepper, and herbs. The dish can be served immediately or sautéed for a little longer, as desired.
