Ciabatta Cheeseburger

Ingredients for 4 servings:

  • 500 g minced beef
  • 4 rolls (ciabatta rolls) for baking
  • 1 m.-sized onion(s)
  • 1 large beefsteak tomato(s)
  • 3 tbsp Worcestershire sauce
  • some tomato paste
  • 4 slices of cheese (Chester)
  • some salt and pepper
  • 2 tbsp ketchup
  • 2 tbsp mayonnaise
  • 1 tsp, heaped mustard
  • small gherkins

Instructions

Working time approx. 30 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour

First, knead the ground beef, salt, pepper, tomato paste, and Worcestershire sauce into a meat dough. Now cut the baking paper into four 15 x 15 cm pieces. Shape the ground beef into patties and place them on the paper. The stack can now go into the refrigerator for about 20 minutes. In the meantime, we’ll take care of the hamburger sauce. Mix together the ketchup, mayo, mustard, and a few fine dashes of Worcestershire sauce and season to taste. Finely chopped gherkins add a nice acidity. Bake the buns and remove the patties from the refrigerator. Heat the pan to about 3/4 of its maximum heat and cover the bottom of the pan with oil. Fry the patties for about 3 minutes on one side, turn them over, top with the Cheshire cheese, and finish cooking. Brush the buns with hamburger sauce on both sides where they meet, then top the bottom half of each bun: first with the lettuce leaf, then a patty, some hamburger sauce, a tomato slice, and then the top half of the bun. Serve immediately.
