Ingredients for 2 servings:

  • 250 g tomatoes
  • 80 g oat flakes, fine
  • 30 g almonds, chopped
  • 80 g Parmesan, grated
  • 3 tbsp olive oil
  • 2 tbsp tomato paste
  • Water
  • Basil or herbs of your choice
  • salt and pepper

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes

quick, easy and healthy

Preheat oven to 180°C. Halve or dice the tomatoes and place them in a small baking dish. Mix the tomato paste with a generous splash of water and season to make a tomato sauce. Pour the sauce over the tomatoes. Gently heat the oil and mix with the Parmesan cheese, almonds, oats, and basil. Season to taste with other herbs and spices. Pour the mixture over the tomatoes and spread evenly. Bake the tomato crumble for about 30 minutes. This recipe is also suitable for other vegetables, depending on what you have in your fridge. You can also add onions or garlic to taste.
