Tomato-ginger sauce

Ingredients for 4 servings:

  • 400 g tomatoes, chunky, with juice, can
  • 1 piece(s) ginger, walnut-sized, finely grated
  • 1 onion(s), finely diced
  • 1 clove(s) garlic, diced
  • 2 tbsp olive oil
  • Salt
  • Black pepper, freshly ground
  • 2 tsp curry, mild
  • 1 pinch(s) of sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

e.g. with tortellini

Peel and finely chop the ginger, onions, and garlic. Sauté everything in a little oil. After a minute, stir in the curry, fry for another minute, and then deglaze with the tomatoes. Simmer for 10 minutes and season to taste with salt, pepper, and sugar.
