Tomato-ginger spread

Ingredients for 4 servings:

  • 1 tsp, heaped oil (coconut oil)
  • 1 small onion(s)
  • 1 piece(s) ginger (approx. walnut-sized)
  • ½ jar tomatoes, dried in oil
  • 150 g cherry tomatoes
  • 1 handful of fresh basil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

vegan and fiery

Add a heaped teaspoon of coconut oil to the pan. Finely chop the small onion and a walnut-sized piece of fresh ginger (more if desired) and fry them together. Drain the tomatoes that were marinated in oil, chop them, and add them. Chop the cherry tomatoes and add them as well. Fry for a few minutes, then chop the basil and sprinkle it on top. Now spoon everything into a mug and blend thoroughly. Tastes delicious cold or warm, on fresh toast.
