Tomato liqueur with blood orange juice, Tabasco and balsamic cream

Ingredients for 1 servings:

  • 500 g tomatoes, ripe
  • 200 ml orange juice (blood orange juice)
  • 1 lemon(s), organic, the juice
  • 100 rock sugar, white
  • 20 g balsamic cream
  • 3 tsp Tabasco
  • 350 ml white rum, 37.5%
  • Black pepper, freshly ground

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bloody Mary style

Quarter the tomatoes, add them to a large mixing bowl with all the ingredients, season with pepper, and blend thoroughly with a hand blender. Transfer to a large, lidded jar, seal, and let it steep on a sunny windowsill for about 14 days. Then strain through a fine-mesh sieve, season with pepper to taste, and bottle. Very spicy, but definitely something different. Makes about 950 ml of liqueur.
