Tomato – Mascarpone Dip

Ingredients
 

  • 250 g Mascarpone
  • 75 g Dried tomatoes in oil
  • 125 g Mozzarella
  • 60 g Pine nuts
  • 0,5 pot Basil
  • 2 Garlic cloves
  • Salt pepper

Instructions
 

  • Roast the pine nuts in a pan until golden brown, remove and allow to cool.
  • Finely dice tomatoes, mozzarella and garlic.
  • Pluck the basil leaves and cut into small pieces.
  • Finely chop the pine nuts, set a few aside for garnish.
  • Mix the mascarpone, tomatoes, mozzarella, basil, garlic and chopped pine nuts well.
  • Season to taste with salt and pepper and refrigerate until ready to serve.
  • Sprinkle with the remaining pine nuts.
