Tomato Mozzarella Cake

Ingredients for 10 servings:

  • 2 tomatoes, skinless and seedless – diced
  • 100 g mozzarella, cut into cubes
  • 1 tsp oregano
  • 1 tbsp olive oil
  • 1 cup(s) milk (200ml)
  • ½ cup(s) oil , (100 ml)
  • 3 eggs
  • 3 tbsp Parmesan, grated
  • 2 cups flour (200 g)
  • 1 tbsp baking powder
  • 2 tbsp parsley, chopped – or dried seasoning
  • 1 cube of meat broth, instant
  • Margarine or butter for greasing

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Brazilian recipe

FILLING: Mix all ingredients and preheat oven. BATTER: Beat the milk with the eggs and meat stock cube until well blended. Add the oil and cheese, stirring continuously. Slowly add the flour and baking powder and gently fold in the parsley (dried seasoning). Pour half of the batter into a greased pan, add the filling, and cover with the remaining batter. Place the pie in the oven (180-200°C) and bake for about 35 minutes until light brown. Variations: add fried onions or bacon!
