Tomato-mozzarella dumplings

Ingredients for 4 servings:

  • 250 g flour
  • 100 g butter
  • 1 tsp salt
  • 1 tsp vinegar
  • 125 ml milk or water
  • 100 g ham
  • 100g salami
  • 100g mozzarella
  • 1 cup tomato(s), pureed
  • salt and pepper
  • 1 egg(s), separated

Instructions

Working time approx. 35 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 25 minutes

Mix all the dough ingredients together until smooth. Then wrap in cling film and let rest in the refrigerator for 30 minutes. For the filling, cut the mozzarella, ham, and salami into pieces of your choice, season the tomato puree, and mix everything together. Roll out the dough and cut out circles using a cup. Place some of the filling in the center of the circles, brush the edges with egg white, and fold them together. Brush the pastry parcels with egg yolk, place them on a baking sheet lined with baking paper, and bake for 20 minutes at 220°C until golden brown.
