Tomato-Mozzarella Sauce

Ingredients for 4 servings:

  • 4 large tomatoes
  • 2 balls of mozzarella
  • 1 tube(s) Tomato paste
  • 1 cup of cream
  • Sugar
  • salt and pepper
  • possibly basil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

as a pasta sauce or as a sauce for a delicious gratin

Wash the tomatoes and dice them into small cubes. Dice the mozzarella as well. Add the tomato pieces to a pan and simmer briefly. Add the tomato paste and mix well. Simmer the tomato pieces and tomato paste, stirring occasionally, until a creamy mixture forms. Stir in the mozzarella cubes and simmer, stirring continuously, until the cheese has melted and is well combined with the mixture. Stir in the cream and simmer slightly. Season to taste. IMPORTANT: Add the sugar first, as it neutralizes the acidity of the tomatoes.
