Zucchini-cheese sauce for spaghetti

Ingredients for 2 servings:

  • 1 large zucchini
  • 250 ml cream
  • 3 cloves garlic
  • e.g. cheese (Gouda)
  • pepper
  • Salt (salty enough depending on the cheese)
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the zucchini and cut into large cubes. Peel and roughly chop the garlic (no need to press it, as it will all be pureed). Briefly fry the zucchini and garlic in a little oil. Then add the cream and simmer until the zucchini is nice and soft. Remove from the heat and puree. Then add the diced cheese. Generously season with pepper and a little salt. Return to the heat and simmer over low heat until the cheese has melted. While the pan is still hot enough to keep the sauce simmering, stay there and stir it frequently, as otherwise the cheese might burn. Season again to taste. This goes very well with spaghetti.
