Tomato, olive and basil chutney

Ingredients for 1 servings:

  • 1 kg tomatoes
  • 1 onion(s)
  • 1 jar green olives, pitted
  • 1 handful of basil, fresh
  • 2 bay leaves
  • 2 cloves garlic
  • 400 g sugar
  • 2 tsp salt
  • 1 chili pepper(s), pitted
  • 150 ml wine vinegar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 10 minutes

Remove the stems from the tomatoes. Peel the onion and garlic. Chop all ingredients very finely or briefly place them in a blender. Then simmer or reduce everything in a saucepan until the desired consistency is reached. This takes about 2 hours. While still hot, pour into prepared jars and seal them. The chutney will keep for several weeks.
