Tomato Parmesan Smoothie

Ingredients for 2 servings:

  • 2 tomatoes
  • 1 bell pepper(s), red
  • 1 bunch arugula
  • 1 tbsp pesto (basil)
  • 1 small jar of ice (crushed ice)
  • 200 ml tomato juice
  • salt and pepper
  • Tabasco
  • Parmesan, for decoration

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Blanch the tomatoes in boiling water, peel off the skins, and remove the stems. Trim and wash the bell peppers and arugula. Cut everything into pieces. Puree all ingredients except the Parmesan and spices. Season with salt, pepper, and a dash of Tabasco. Ladle into jars and sprinkle with grated Parmesan or garnish with a piece of Parmesan.
