Ingredients for 1 servings:
- 8 tomatoes
- 4 tbsp olive oil
- 1 onion(s), finely chopped
- 3 garlic cloves, finely chopped
- 1 bell pepper(s), green, pitted, diced
- Chili pepper(s), red, e.g. 2 Byrds Eye or 1 Cayenne, finely chopped
- 2 tbsp brown sugar
- 4 tbsp vinegar (malt)

Place the tomatoes in hot water for about 1 minute, then remove, drain, and peel the skins. Heat the oil in a pan over low heat. Sauté the onion and garlic for about 2 minutes, then add the bell peppers and chili. Sauté for another 2-3 minutes, stirring constantly, until the bell peppers begin to soften. Increase the heat to medium and add the tomatoes. When it begins to boil, stir in the sugar. Once the sugar has completely melted, add the malt vinegar. Boil vigorously for another 5 minutes, stirring constantly. Remove from the heat and allow to cool completely.
