Tomato pesto sauce with spinach

Ingredients for 6 servings:

  • 1 large onion(s)
  • 500 g leaf spinach, fresh
  • 500 ml tomato(s), pureed
  • 3 tbsp pesto (basil)
  • 200 ml vegetable stock
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with pasta, gnocchi

Wash the spinach leaves. Peel and finely dice the onion. Sauté the onion in a large pan or saucepan in hot olive oil. Deglaze with 200 ml vegetable stock, add the spinach leaves, and simmer gently until wilted. Add the passata to the spinach and stir well. Season with pesto, salt, and pepper, and simmer for about 5 minutes. This sauce goes perfectly with pasta or gnocchi. Tip: Quickly sautéed king prawns also tastes delicious with it.
