Curd casserole with fruit

Ingredients for 4 servings:

  • 375 g low-fat quark (low-fat curd cheese)
  • 100 g butter
  • 80 g powdered sugar
  • 4 eggs, separated
  • ½ lemon(s), the grated peel and the juice
  • 1 pinch of salt
  • 30 g semolina
  • 100 g sugar
  • 500 g fruit of your choice (cherries, plums, apricots, apples, etc.)
  • 50 g almond flakes
  • Fat for the mold

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cream together softened butter with powdered sugar, egg yolk, lemon juice, and salt. Stir in the semolina and low-fat curd cheese. Beat the egg whites, then beat with the sugar until firm and fold in. Spread 2/3 of the batter into a well-greased baking dish (25 cm x 15 cm). Wash and finely chop the fruit, arrange it on top, and spread the remaining curd cheese batter on top. Sprinkle with flaked almonds. Bake in a preheated oven at 160°C (convection oven) for approximately 30-35 minutes.
