Tomato quiche

Ingredients for 3 servings:

  • 200 g flour
  • 100 g butter
  • 1 egg(s)
  • 1 pinch of salt
  • 5 tomatoes, sliced
  • 1 egg(s)
  • 200 g cream
  • 3 tbsp herb cream cheese
  • 150 g cheese, grated
  • salt and pepper
  • basil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

super easy to make and super delicious!

Mix flour, butter, egg, and salt into a shortcrust pastry (alternatively, I use a “pate brisée” from the supermarket if you’re in a hurry). Roll it out, place it in a quiche dish, and arrange the tomatoes on the pastry. Mix together the egg, cream, herb cream cheese, a little salt, pepper, and basil, and cover the tomatoes completely. Spread the cheese over the dough and bake in a preheated oven at 200°C for 30-40 minutes. If you like, you can also refine the quiche with pieces of ham, mushrooms, or zucchini.
