Tomato rice

Ingredients for 2 servings:

  • 1 tomato(s)
  • 125 g long grain rice, parboiled
  • 2 tbsp oil
  • 175 ml meat broth
  • salt and pepper if needed
  • 1 tbsp parsley, chopped

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 27 minutes

Peel and deseed the tomato, and cut the flesh into small cubes. Lightly sauté the rice in the oil. Deglaze with the meat broth, cover, and simmer on low heat for 7 minutes. Then remove from the heat, add the diced tomatoes, and let simmer for another 10 minutes. Once the rice is cooked, season with salt and pepper, if desired, and stir in the parsley.
