Ingredients for 2 servings:

  • 4 tomatoes
  • 2 shallots
  • olive oil
  • 2 cloves garlic
  • Salt

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

Trampo

Peel the tomatoes, cut them open, and remove the seeds. Then cut them into small pieces. Dice the onion and garlic. Mix everything together in a bowl with good olive oil and salt and let it sit for at least two hours (but please do not refrigerate it). Vinegar is not necessary because the tomatoes have their own acidity.
