Tomato salad with blue cheese

Ingredients for 4 servings:

  • 500 g tomatoes
  • 2 onions, red
  • 1 bunch peppermint
  • 150 g blue cheese (e.g. Roquefort, St. Agur, Gorgonzola)
  • 6 tbsp vinegar (Condimento Balsamic vinegar bianco)
  • 2 tbsp oil (grape seed or nut oil)
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the onions and cut into 0.5 cm wide rings. Mix the vinegar and oil, season with salt and pepper. Pour the mixture over the onion rings and marinate for 1/2 hour. The onions should be covered with the mixture. Reserve a few mint leaves and sprigs for decoration, cut the rest into fine strips and add to the onion mixture. Wash the tomatoes, cut them into approximately 1 cm wide rings, and add them to the onion mixture. Mix thoroughly and marinate for another 10 minutes. Crumble the cheese and sprinkle it over the tomato and onion mixture. Serve garnished with the remaining mint.
