Ingredients for 4 servings:
- 6 large tomatoes, ripe
- 4 tbsp cheese (herder’s cheese)
- salt and pepper
- 2 tsp chili flakes, nB also less
- 1 tbsp Balsamic vinegar (pineapple)
- ½ tbsp olive oil

Low in calories, suitable for diets
Wash the tomatoes, cut them into small cubes, and place them in a bowl. Drizzle with the pineapple balsamic vinegar. I always use spray-on balsamic vinegar. It spreads more evenly. Then stir in the olive oil and mix well. It’s important to add the balsamic vinegar to the tomatoes before the olive oil, otherwise the tomatoes won’t be able to absorb it. Season with salt, pepper, and chili flakes to taste. Cut the feta cheese into small cubes, or simply crumble it and sprinkle it on top.
