Tomato salad with goat cheese

Ingredients for 2 servings:

  • 8 small tomatoes (vine tomatoes)
  • 1 bunch arugula, (alternatively 80 grams tender leaf spinach)
  • 1 small onion(s), white
  • 1 tbsp balsamic vinegar
  • salt and pepper
  • 2 tbsp olive oil
  • 100 g cheese, not too soft goat cheese

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash and slice the tomatoes. Wash and sort the arugula, shaking the leaves dry. Peel and dice the onion. Arrange the arugula on plates and arrange the tomatoes on top, slightly overlapping them. Sprinkle with the diced onions. Whisk together the vinegar, salt, pepper, and oil, and drizzle over the tomatoes. Crumble the cheese and scatter it over the top.
