Tomato salad with green asparagus

Ingredients for 2 servings:

  • 250 g asparagus, green
  • 200 g tomatoes
  • 1 shallot(s)
  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp balsamic vinegar
  • 1 tbsp basil, chopped
  • salt and pepper
  • 1 tbsp powdered sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Trim the woody ends of the asparagus. Cut the asparagus diagonally into approximately 5 cm long pieces. Heat a tablespoon of oil in a pan and dust the asparagus with powdered sugar. Fry for about 10 minutes until nicely browned. Dice the tomatoes and finely dice the shallot. Mix a dressing with two tablespoons of oil, the lime juice, balsamic vinegar, salt, pepper, and basil. Toss the tomatoes, cooled asparagus, and onions with the dressing.
