Tomato salad with pomegranate seeds and herbs

Ingredients for 2 servings:

  • 6 m.-large tomato(s)
  • 2 tbsp fresh herbs, chopped (e.g. parsley or chives)
  • ½ small pomegranate, seeds
  • 2 tbsp vinegar
  • 1 tsp lemon juice or to taste
  • 1 tbsp grape seed oil
  • 2 tbsp water
  • 1 tbsp fresh chopped herbs
  • salt and pepper
  • Sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Total time approx. 40 minutes

Wash the tomatoes, remove the stems, and slice them. Stir together the dressing and season to taste. Mix the tomatoes, herbs, pomegranate seeds, and dressing and let it sit. Season to taste and serve.
