Tomato salad with port wine onions

Ingredients for 3 servings:

  • 150 g shallot(s)
  • 2 tbsp olive oil
  • 200 ml port wine
  • 1 bay leaf
  • salt and pepper
  • 1 tsp brown sugar
  • 500 g cherry tomatoes
  • 2 tbsp balsamic vinegar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Peel the shallots and halve or quarter them, depending on their size. Sauté the shallots in hot oil. Add the port wine, bay leaves, salt, pepper, and sugar and simmer over low heat for 10 minutes. Quarter the tomatoes and season with salt and pepper. Add the shallots to the tomatoes and season with balsamic vinegar.
